    Asparagus should be added once the water is boiling. Add a little salt and a touch of bicarbonate of soda to the water also so the colours of the Asparagus (or whatever) don't lower. Colours are vivid that way, a restaurant tip.

    Thanks for cooking la sopa de res! I don't add jalapeños to my beef soup, but if you like it a little spicy, that's your taste. I use cilantro, not the other herbs you used. Also, consider boiling the yuca until soft, then fry it. That's the way my mother always cooked it, and I also do it that way. The fried yuca is spongy, crunchy, and softer to eat it.

    Coming late to this party. Potato wine is a well-established British country wine. I think part of your problem was making a puree of the potatoes rather than treating the vegetable as a source of flavor for the water - a potato tea, if you will. If you puree the potatoes you may need to use a very fine filter to remove the starch. If you simply quarter the potatoes and cook them long enough to make mashed potatoes afterwards, that liquid is the equivalent of juice. One recipe I have suggests the addition of wheat berries and raisins and another suggests the addition of ginger and sliced oranges and lemons. Whether you peel the potatoes or not would seem to be up to you. Some recipes suggest you do, some that you don't.

    Its a good recipe, but you don't put the undressed pasta in the bowl and then ladle the sauce over it. Real Italians place several ladles of sauce (Ragu) in a pan and add the cooked pasta in that pan and cook it for about 1 - 2 minutes so it gets the flavor of all the work you did. If it's done your way and you're serving many people, the pasta will stick together because of the starch. Of course you way looks good, but that's NOT how to serve it. This comment is coming from a 1st. generation Italian and I visit family & restaurants in Italy and that's how pasta is served.
